Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 34 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 4 ounces cream cheese, softened and cut into cubes
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Cooked pasta, rice, or crusty bread for serving

Instructions

  1. 1. Sear chicken breasts in olive oil in a skillet, then place in slow cooker.
  2. 2. Sauté onion and garlic in the same skillet until softened. Stir in herbs and red pepper flakes.
  3. 3. Add diced tomatoes and chicken broth to the skillet, bring to a simmer, scraping up browned bits.
  4. 4. Pour tomato mixture over chicken in the slow cooker.
  5. 5. Cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is cooked through.
  6. 6. Remove chicken, shred or dice it.
  7. 7. Stir cream cheese, Parmesan, and heavy cream into the slow cooker sauce until smooth.
  8. 8. Return chicken to the sauce and stir to coat.
  9. 9. Let cook uncovered for 10-15 minutes to thicken.
  10. 10. Serve hot, garnished with parsley, with your chosen accompaniment.

Notes

Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat or in the microwave, adding a splash of chicken broth or cream if needed.
