- 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 medium yellow onion, finely chopped
- 3–4 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 4 ounces cream cheese, softened and cut into cubes
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
- Cooked pasta, rice, or crusty bread for serving
Instructions
- 1. Sear chicken breasts in olive oil in a skillet, then place in slow cooker.
- 2. Sauté onion and garlic in the same skillet until softened. Stir in herbs and red pepper flakes.
- 3. Add diced tomatoes and chicken broth to the skillet, bring to a simmer, scraping up browned bits.
- 4. Pour tomato mixture over chicken in the slow cooker.
- 5. Cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is cooked through.
- 6. Remove chicken, shred or dice it.
- 7. Stir cream cheese, Parmesan, and heavy cream into the slow cooker sauce until smooth.
- 8. Return chicken to the sauce and stir to coat.
- 9. Let cook uncovered for 10-15 minutes to thicken.
- 10. Serve hot, garnished with parsley, with your chosen accompaniment.
Notes
Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat or in the microwave, adding a splash of chicken broth or cream if needed.
