Description

A comforting chicken gnocchi soup made in the crockpot, perfect for cold evenings.


Ingredients

Scale
  • 1 pound chicken breast
  • 2 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 (16 oz) package of gnocchi
  • 1 cup evaporated milk or heavy cream
  • 2 cups fresh spinach

Instructions

  1. Add the chicken breast, chicken broth, carrots, celery, onion, garlic, Italian seasoning, salt, and pepper to a crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  3. Shred the chicken in the pot with two forks.
  4. Stir in the gnocchi and cook for an additional 30 minutes.
  5. Before serving, stir in the evaporated milk or cream and fresh spinach until the spinach wilts.
  6. Serve hot and enjoy!

Notes

Best eaten fresh the same day; gnocchi softens if it sits.
