Description
A comforting chicken gnocchi soup made in the crockpot, perfect for cold evenings.
Ingredients

- 1 pound chicken breast
- 2 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 (16 oz) package of gnocchi
- 1 cup evaporated milk or heavy cream
- 2 cups fresh spinach
Instructions
- Add the chicken breast, chicken broth, carrots, celery, onion, garlic, Italian seasoning, salt, and pepper to a crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Shred the chicken in the pot with two forks.
- Stir in the gnocchi and cook for an additional 30 minutes.
- Before serving, stir in the evaporated milk or cream and fresh spinach until the spinach wilts.
- Serve hot and enjoy!
Notes
Best eaten fresh the same day; gnocchi softens if it sits.
