Description
A warm, hearty soup made with ground beef and a medley of beans, vegetables, and spices, perfect for weeknight dinners.
Ingredients

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 carrots, diced
- 2 cups beef broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Brown the ground beef over medium heat until fully cooked.
- Drain excess fat and add the browned beef into a crockpot.
- Add all other ingredients: black beans, kidney beans, corn, tomatoes, bell pepper, onion, carrots, beef broth, chili powder, cumin, and salt and pepper.
- Stir to combine thoroughly.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, stir well again and serve warm.
Notes
For a lighter version, substitute ground beef with ground turkey. Cornbread makes a great side.
