Ingredients

- 1 pound of chicken breasts
- 4 cups of chicken broth
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves of garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place the chicken breasts in the slow cooker. Trim any excess fat and arrange breasts in a single layer for even cooking.
- Add the chicken broth, diced onion, sliced carrots, sliced celery, and minced garlic.
- Squeeze the juice of the lemon and add the zest to the slow cooker.
- Season with salt and pepper.
- Cover and cook on low for 360 minutes or on high for 240 minutes.
- Once cooked, shred the chicken and stir it back into the soup.
- Garnish with fresh parsley before serving.
Notes
Serve with a slice of crusty bread or over steamed rice. Add a squeeze of fresh lemon before serving for extra brightness.
