- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 carrot, finely chopped
- 2 cans (28 ounces each) crushed San Marzano tomatoes
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper, to taste
- 1 pound ground beef or Italian sausage (optional)
Instructions
- Heat the olive oil in a skillet over medium heat. Sauté the onion, carrot, and garlic until translucent, about 5 minutes.
- Add the sautéed vegetables to the Crockpot.
- Pour in the crushed tomatoes and stir in the basil, oregano, bay leaf, and season with salt and pepper.
- If using meat, brown it in the same skillet until fully cooked, then add it to the Crockpot, stirring to combine.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes.
- Before serving, remove the bay leaf and adjust seasoning if needed.
Notes
Ensure your skillet is hot enough before adding the vegetables to prevent steaming. Browning meat can enhance flavor.
