Description

A rich and creamy chicken chili that is easy to prepare in a crockpot, allowing you to walk away while it cooks to perfection.


Ingredients

  • 2 cups shredded boneless skinless chicken breasts
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 8 oz cream cheese
  • 1 tablespoon savory seasonings (such as cumin, chili powder, garlic powder, onion powder)
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Combine the shredded chicken, corn, black beans, diced tomatoes, and chicken broth in a crockpot.
  2. Add the cream cheese and savory seasonings.
  3. Stir well to combine all ingredients.
  4. Cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is cooked through and tender.
  5. Shred the chicken in the pot with two forks if needed and stir everything together.
  6. Season with salt and pepper to taste.
  7. Serve warm and enjoy your hearty chili!
