Description

A comforting slow cooker soup made with tender chicken, wild rice, and rich cream.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. In a crockpot, combine the chicken, wild rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, pepper, and paprika.
  2. Stir to combine and add olive oil.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the heavy cream.
  5. Adjust seasoning as needed and serve warm.

Notes

Best eaten fresh the same day; reheat gently if necessary with a splash of broth.
