Description
A comforting slow cooker soup made with tender chicken, wild rice, and rich cream.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup wild rice
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- In a crockpot, combine the chicken, wild rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, pepper, and paprika.
- Stir to combine and add olive oil.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream.
- Adjust seasoning as needed and serve warm.
Notes
Best eaten fresh the same day; reheat gently if necessary with a splash of broth.
