Instructions

  2. Combine the rinsed quinoa and water or vegetable broth in a pot; bring to a boil, then reduce to low, cover, and simmer for about 15 minutes until fluffy.
  3. Steam or blanch the broccoli florets until tender yet crisp, then rinse under cold water.
  4. Combine the cooked quinoa, broccoli, diced apple, sliced almonds, and chopped pecans in a large bowl.
  5. Whisk together honey, Dijon mustard, and olive oil in a small bowl. Season dressing with salt and pepper.
  6. Pour the dressing over the salad and toss gently to combine.
