Description
A nourishing and vibrant chicken and mushroom soup infused with ginger and lime, served with fresh cilantro rice for a complete and comforting meal.

- For the Soup:
- 1 tablespoon olive oil or avocado oil
- 1 pound boneless chicken thighs or breasts, cut into bite-sized pieces
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 8 ounces cremini mushrooms, sliced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 cups chicken broth (low sodium)
- 1 tablespoon soy sauce or tamari
- 2 tablespoons fresh lime juice
- 1 tablespoon cornstarch (optional)
- 2 tablespoons water (for thickening)
- Fresh cilantro for garnish
- For the Cilantro Rice:
- 1 cup long-grain white rice, rinsed
- 2 cups water or chicken broth
- 1/2 teaspoon salt
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
Instructions
- 1. Cook the rice: In a saucepan, combine rice, water (or broth), and salt. Bring to a boil, then reduce heat, cover, and simmer for 15–20 minutes.
- 2. Remove rice from heat, let sit 5 minutes, then fluff and mix with cilantro and lime juice.
- 3. Heat oil in a large pot and brown chicken pieces for 5–7 minutes, then remove and set aside.
- 4. In the same pot, cook onion for about 5 minutes until soft.
- 5. Add garlic and ginger, cook 1 minute until fragrant.
- 6. Add mushrooms and cook until softened and slightly browned (5–7 minutes).
- 7. Stir in thyme, salt, and pepper.
- 8. Pour in chicken broth and soy sauce, bring to a simmer.
- 9. Return chicken to pot and simmer for 10–15 minutes until cooked through.
- 10. (Optional) Mix cornstarch with water and stir into soup to thicken.
- 11. Add lime juice and adjust seasoning to taste.
- 12. Serve soup over cilantro rice and garnish with fresh cilantro.
Notes
Add lime juice at the end for best flavor. Do not overcook chicken breasts to avoid dryness. Store soup and rice separately for best texture.
