- 1 tablespoon olive oil or avocado oil
- 1 medium head of green cabbage, thinly sliced
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced

- 1/4 cup soy sauce or tamari (for gluten-free)
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch (optional, for thickening sauce)
- 2 tablespoons water (if using cornstarch)
- Optional additions: 1 red bell pepper, thinly sliced; 1 cup broccoli florets; a pinch of red pepper flakes for heat
- Salt and freshly ground black pepper to taste
Instructions
- 1. Prepare the Beef: If your beef isn’t pre-sliced, thinly slice it against the grain. In a medium bowl, toss the beef with 1 tablespoon of soy sauce/tamari and let it marinate while you prepare the vegetables.
- 2. Heat the Pan: Heat 1 tablespoon of olive oil or avocado oil in a large skillet or wok over medium-high heat.
- 3. Sear the Beef: Add the marinated beef to the hot pan in a single layer. Cook for 1-2 minutes per side, until browned. Remove the beef from the pan and set it aside.
- 4. Sauté Aromatics: Add the thinly sliced onion to the same pan. Cook for 2-3 minutes, stirring occasionally, until it begins to soften. Then, add the minced garlic and grated ginger. Cook for another 30 seconds, until fragrant. Add any optional hard vegetables like bell pepper or broccoli now.
- 5. Add the Cabbage: Add the thinly sliced cabbage to the pan. Stir-fry for 5-7 minutes, or until the cabbage is tender-crisp.
- 6. Make the Sauce: In a small bowl, whisk together the remaining soy sauce/tamari, rice vinegar, and sesame oil. If using cornstarch, whisk in the cornstarch and water mixture until smooth.
- 7. Combine and Finish: Return the cooked beef to the pan with the vegetables. Pour the prepared stir-fry sauce over everything. Stir well to coat all the ingredients. If using cornstarch, cook for another 1-2 minutes until the sauce has thickened slightly and the beef is heated through.
- 8. Season and Serve: Taste and season with salt and freshly ground black pepper if needed. Serve immediately.
Notes
Store cooled stir-fry in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm in a skillet over medium-low heat or in the microwave. Add a splash of water or broth when reheating to help restore moisture. Avoid over-reheating.
