Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 large yellow onion, finely chopped
  • 2 medium carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 (28 ounce) can crushed tomatoes
  • 2 cups beef broth
  • 1 cup whole milk
  • 1 pound rigatoni pasta
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned; drain excess grease.
  2. 2. Add chopped onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  3. 3. Stir in minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute. Season with salt and pepper.
  4. 4. Pour in crushed tomatoes and beef broth. Bring to a simmer, scraping up browned bits.
  5. 5. Stir in whole milk.
  6. 6. Add rigatoni pasta, ensuring it’s submerged.
  7. 7. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until pasta is al dente and liquid is mostly absorbed. Stir occasionally.
  8. 8. Stir in Parmesan cheese until melted. Taste and adjust seasoning.
  9. 9. Let rest for a few minutes before serving.

Notes
