Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 large yellow onion, finely chopped
- 2 medium carrots, finely chopped
- 2 celery stalks, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1 (28 ounce) can crushed tomatoes
- 2 cups beef broth
- 1 cup whole milk
- 1 pound rigatoni pasta
- 1/2 cup grated Parmesan cheese, plus more for serving
- Fresh parsley, chopped, for garnish (optional)
Instructions
- 1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned; drain excess grease.
- 2. Add chopped onion, carrots, and celery. Cook until softened, about 8-10 minutes.
- 3. Stir in minced garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute. Season with salt and pepper.
- 4. Pour in crushed tomatoes and beef broth. Bring to a simmer, scraping up browned bits.
- 5. Stir in whole milk.
- 6. Add rigatoni pasta, ensuring it’s submerged.
- 7. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until pasta is al dente and liquid is mostly absorbed. Stir occasionally.
- 8. Stir in Parmesan cheese until melted. Taste and adjust seasoning.
- 9. Let rest for a few minutes before serving.
