  • 1 large head of garlic
  • 1 tablespoon olive oil
  • For the Potatoes:
  • 2 pounds Yukon Gold potatoes (about 45 medium)
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper, plus more to taste
  • For the Cream Sauce:
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely minced
  • 2 cloves garlic, minced
  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon freshly grated nutmeg (optional)
  • For the Topping:
  • 1 ½ cups shredded Gruyère cheese (or a mix of Gruyère and Parmesan)
  • ¼ cup panko breadcrumbs (optional, for extra crunch)

Instructions

  1. 1. Preheat oven to 400°F (200°C). Slice off the top ¼ inch of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft. Squeeze out the cloves, mash into a paste.
  2. 2. Wash, peel, and thinly slice potatoes (about ⅛-inch thick). Toss with 1 tsp salt and ½ tsp pepper.
  3. 3. Melt butter in a saucepan over medium heat. Sauté minced onion until softened (5-7 min). Add minced garlic and cook for 1 minute until fragrant.
  4. 4. Pour in milk and heavy cream. Stir in roasted garlic paste, ½ tsp salt, ¼ tsp pepper, and nutmeg (if using). Bring to a gentle simmer and cook for 5 minutes, stirring occasionally, until slightly thickened.
  5. 5. Lightly butter a 9×13 inch baking dish. Layer half the potatoes, pour half the sauce over, and sprinkle with half the cheese. Repeat with remaining potatoes, sauce, and cheese.
  6. 6. Cover dish tightly with foil and bake for 30 minutes.
  7. 7. Remove foil. If using panko, sprinkle over the cheese. Bake for another 20-30 minutes, until potatoes are tender and top is golden brown and bubbly.
  8. 8. Let rest for 10-15 minutes before serving.

Notes

Store completely cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a moderate oven at 325°F (160°C) covered with foil for 15-25 minutes, or until heated through and bubbly.
