Description

Make tender, flavorful beef stroganoff with minimal effort using your slow cooker. This classic dish is perfect for busy weeknights and comes together with simple ingredients.

Ingredients

Scale
  • 1.5 to 2 pounds beef chuck roast, trimmed of excess fat and cut into 1-inch cubes
  • 1 large onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • 1.5 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon all-purpose flour
  • 1/2 cup sour cream
  • 1 tablespoon fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. In your slow cooker insert, combine the cubed beef, chopped onion, sliced mushrooms, minced garlic, dried thyme, salt, and pepper.
  2. 2. Pour the beef broth and Worcestershire sauce over the ingredients. Stir to combine.
  3. 3. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, or until the beef is fork-tender.
  4. 4. About 30 minutes before serving, in a small bowl, whisk together the tablespoon of flour with about 1/4 cup of the hot cooking liquid from the slow cooker until smooth. Pour this slurry back into the slow cooker and stir well to distribute.
  5. 5. Once the sauce has thickened, stir in the sour cream until fully incorporated and the sauce is creamy.
  6. 6. Taste and adjust salt and pepper as needed. Garnish with fresh chopped parsley, if desired. Serve hot.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze for up to 2-3 months. Reheating: Gently reheat on the stovetop over medium-low heat, or in the microwave, adding a splash of liquid if needed. Frozen stroganoff should be thawed before reheating.
