- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can mild diced tomatoes and green chilies (like Ro-Tel), undrained
- 1 packet (about 1 ounce) taco seasoning
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ¼ teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
- 1 ½ cups milk
- 1 cup yellow cornmeal
- ¼ cup butter, melted
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup shredded cheddar cheese, plus more for topping
- ½ cup shredded Monterey Jack cheese
Instructions
- 1. Preheat your oven to 375°F (190°C). Lightly grease a 2-quart casserole dish.
- 2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned; drain grease.
- 3. Add chopped onion and cook until softened. Stir in garlic and cook for 1 minute.
- 4. Add diced tomatoes, black beans, diced tomatoes and green chilies, taco seasoning, chili powder, cumin, and cayenne (if using). Stir well.
- 5. Simmer for 10-15 minutes, stirring occasionally. Season with salt and pepper.
- 6. In a medium bowl, whisk together milk, cornmeal, melted butter, baking powder, and ½ tsp salt.
- 7. Stir in shredded cheddar and Monterey Jack cheeses into the cornmeal mixture.
- 8. Pour meat filling into the prepared casserole dish.
- 9. Spoon cornmeal mixture over the meat filling, spreading gently.
- 10. Sprinkle extra cheddar cheese over the top.
- 11. Bake for 30-35 minutes, until topping is set and golden brown.
- 12. Let rest for 5-10 minutes before serving.
Notes
Allow casserole to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat in microwave or oven.
