- 4 Baked potatoes
- 1 cup Sour cream
- 1 cup Cheese, shredded
- 1/4 cup Chives, chopped
- 2 tablespoons Butter
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the baked potatoes in half lengthwise and scoop out the insides into a bowl, leaving a thin layer of potato in the skins.
- Mash the scooped-out potato with sour cream, cheese, chives, butter, salt, and pepper until creamy.
- Spoon the mixture back into the potato skins.
- Place the stuffed potatoes on a baking sheet and bake for 15-20 minutes until heated through and tops are slightly golden.
- Serve hot.
