Description

Delicious twice baked potatoes filled with creamy cheese, sour cream, and chives for a comforting side dish.


Ingredients

  • 4 Baked potatoes
  • 1 cup Sour cream
  • 1 cup Cheese, shredded
  • 1/4 cup Chives, chopped
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the baked potatoes in half lengthwise and scoop out the insides into a bowl, leaving a thin layer of potato in the skins.
  3. Mash the scooped-out potato with sour cream, cheese, chives, butter, salt, and pepper until creamy.
  4. Spoon the mixture back into the potato skins.
  5. Place the stuffed potatoes on a baking sheet and bake for 15-20 minutes until heated through and tops are slightly golden.
  6. Serve hot.
