Description

A quick and refreshing salad with crisp lettuce, a zesty lemon-Parmesan dressing, and a hint of garlic. Perfect for a speedy side or light lunch.

Ingredients

Scale
  • 1 head of crisp lettuce (such as romaine, butter, or a spring mix)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced or grated
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. 1. Wash and dry the lettuce thoroughly. Tear or chop into bite-sized pieces and place in a salad bowl.
  2. 2. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, and minced garlic until emulsified.
  3. 3. Pour the dressing over the lettuce, add the grated Parmesan cheese, and season with salt and pepper.
  4. 4. Toss gently until all leaves are lightly coated.
  5. 5. Serve immediately, garnished with extra Parmesan cheese if desired.

Notes

Salad is best enjoyed immediately. If storing leftovers, keep undressed lettuce and dressing separate in airtight containers in the refrigerator.
