- 1 pound ground beef (80/20 blend)
- 2 tablespoons vegetable oil
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons water
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, thinly sliced
- 1 head butter lettuce, leaves separated
- 1/4 cup chopped peanuts
- 2 tablespoons fresh cilantro, chopped
- Lime wedges for serving
Instructions
- 1. Heat vegetable oil in a large skillet over medium-high heat.
- 2. Add diced onion and cook 3-4 minutes until softened.
- 3. Add garlic and ginger, cook 30 seconds until fragrant.
- 4. Add ground beef, breaking up with spoon. Cook 5-7 minutes until browned.
- 5. Whisk together soy sauce, oyster sauce, rice wine vinegar, and sesame oil.
- 6. Mix cornstarch and water in a separate bowl to create slurry.
- 7. Pour sauce over beef and simmer 1-2 minutes.
- 8. Add cornstarch slurry and cook 1-2 minutes until sauce thickens.
- 9. Remove from heat, add red pepper flakes and half the green onions.
- 10. Spoon mixture into lettuce cups and garnish with remaining green onions, peanuts, and cilantro.
- 11. Serve immediately with lime wedges.
Notes
Store leftover beef mixture in refrigerator up to 3 days. Keep lettuce separate to prevent wilting. Reheat gently in skillet over medium-low heat.
