  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 4 large tortillas or wraps
  • 1/2 cup shredded lettuce
  • 1/4 cup shredded carrots
  • 1/4 cup finely chopped celery
  • 1/4 cup crumbled vegan or regular blue cheese (optional)
  • For the Vegan Ranch Dressing:
  • 1/2 cup vegan mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1/2 teaspoon dried chives
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of salt and black pepper

Instructions

  1. 1. Prepare the Tofu: Press extra-firm tofu to remove excess moisture. Cut into 1/2-inch cubes.
  2. 2. Bake or Pan-Fry Tofu: Toss tofu cubes with olive oil, salt, and pepper. Bake at 400°F (200°C) for 20-25 minutes until golden and crispy, or pan-fry in a skillet until golden brown on all sides.
  3. 3. Make Buffalo Sauce: Whisk together hot sauce, melted butter, apple cider vinegar, garlic powder, onion powder, salt, and pepper in a small bowl.
  4. 4. Coat Tofu: Add the crispy tofu to the buffalo sauce and toss to coat evenly.
  5. 5. Prepare Ranch Dressing: In another bowl, whisk together vegan mayonnaise, lemon juice, dill, chives, garlic powder, onion powder, salt, and pepper until smooth.
  6. 6. Warm Tortillas: Lightly warm the tortillas to make them pliable.
