Description

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 ½ pounds Yukon Gold potatoes, peeled and thinly sliced (about ¼-inch thick)
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • ½ cup milk (whole or 2%)
  • ½ cup shredded cheddar cheese, plus more for topping
  • ¼ cup shredded Monterey Jack cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. 1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. 2. In a large skillet over medium-high heat, cook ground beef until browned. Drain off excess fat.
  3. 3. Add olive oil to the skillet. Add chopped onion and cook until softened, 5-7 minutes. Stir in garlic and cook for 1 minute more.
  4. 4. Arrange half of the sliced potatoes in the bottom of the prepared baking dish.
  5. 5. In a medium bowl, whisk together condensed cream of mushroom soup, milk, ½ cup cheddar cheese, Monterey Jack cheese, salt, and pepper.
  6. 6. Spoon the ground beef and onion mixture evenly over the potato layer.
  7. 7. Arrange the remaining sliced potatoes on top of the beef mixture.
  8. 8. Pour the soup and cheese mixture evenly over the potatoes and beef.
  9. 9. Sprinkle the remaining cheddar cheese over the top.
  10. 10. Cover the baking dish tightly with aluminum foil and bake for 40 minutes.
  11. 11. Remove the foil and bake for another 15-20 minutes, or until potatoes are tender and cheese is melted and bubbly.
  12. 12. Let the casserole rest for 5-10 minutes before serving.

Notes

Store leftover casserole in an airtight container in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or larger portions in a covered oven at 350°F (175°C) until warmed through.
