- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 ½ pounds Yukon Gold potatoes, peeled and thinly sliced (about ¼-inch thick)
- 1 (10.5 ounce) can condensed cream of mushroom soup
- ½ cup milk (whole or 2%)
- ½ cup shredded cheddar cheese, plus more for topping
- ¼ cup shredded Monterey Jack cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- 1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- 2. In a large skillet over medium-high heat, cook ground beef until browned. Drain off excess fat.
- 3. Add olive oil to the skillet. Add chopped onion and cook until softened, 5-7 minutes. Stir in garlic and cook for 1 minute more.
- 4. Arrange half of the sliced potatoes in the bottom of the prepared baking dish.
- 5. In a medium bowl, whisk together condensed cream of mushroom soup, milk, ½ cup cheddar cheese, Monterey Jack cheese, salt, and pepper.
- 6. Spoon the ground beef and onion mixture evenly over the potato layer.
- 7. Arrange the remaining sliced potatoes on top of the beef mixture.
- 8. Pour the soup and cheese mixture evenly over the potatoes and beef.
- 9. Sprinkle the remaining cheddar cheese over the top.
- 10. Cover the baking dish tightly with aluminum foil and bake for 40 minutes.
- 11. Remove the foil and bake for another 15-20 minutes, or until potatoes are tender and cheese is melted and bubbly.
- 12. Let the casserole rest for 5-10 minutes before serving.
Notes
Store leftover casserole in an airtight container in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or larger portions in a covered oven at 350°F (175°C) until warmed through.
