A comforting and easy one-pan pasta bake featuring ground beef, sweet corn, rotini, and creamy ranch seasoning, topped with melted cheddar cheese. Perfect for busy weeknights!

- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 packet (1 ounce) ranch seasoning mix
- 1 cup milk (whole or 2%)
- 1 (15 ounce) can sweet corn, drained
- 8 ounces rotini pasta, uncooked
- 2 cups shredded cheddar cheese, divided
- Salt and freshly ground black pepper to taste
- Optional: Fresh parsley, chopped, for garnish
Instructions
- 1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- 2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned; drain grease.
- 3. Add chopped onion to the skillet and cook until softened, about 5-7 minutes.
- 4. Stir in minced garlic and cook for 1 minute until fragrant.
- 5. Add condensed cream of mushroom soup and cream of chicken soup; stir to combine.
- 6. Pour in milk and stir until smooth.
- 7. Stir in ranch seasoning mix until evenly distributed.
- 8. Add drained sweet corn and stir.
- 9. Add uncooked rotini pasta and stir until well-coated.
- 10. Season with salt and pepper to taste.
- 11. Pour mixture into prepared baking dish and spread evenly.
- 12. Sprinkle 1 ½ cups shredded cheddar cheese over the top.
- 13. Cover dish tightly with aluminum foil.
- 14. Bake for 30 minutes.
- 15. Remove foil and sprinkle with remaining ½ cup cheddar cheese.
- 16. Bake uncovered for 10-15 minutes, until cheese is melted and bubbly.
- 17. Let rest for 5-10 minutes before serving.
Notes
Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in microwave, oven, or stovetop. Can be frozen for up to 2-3 months.
