- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 1 (28-ounce) can crushed tomatoes
- 1/2 cup vegetable broth
- Salt and freshly ground black pepper to taste
- 1 cup shredded cheese (such as mozzarella, cheddar, or a blend)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
- Add the minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for another minute until fragrant, stirring constantly.
- Stir in the rinsed and drained cannellini beans and the crushed tomatoes. Mix everything to combine.
- Pour in the vegetable broth and season generously with salt and freshly ground black pepper. Stir well.
- Bring the mixture to a simmer, then reduce the heat to low and let it cook for about 5-10 minutes.
- Sprinkle the shredded cheese evenly over the top of the bean and tomato mixture.
- Transfer the skillet or Dutch oven to the preheated oven. Bake for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
- Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh chopped parsley, if desired.
Notes
Allow the bake to cool completely before storing. Transfer any leftovers to an airtight container and store in the refrigerator for up to 3-4 days. Reheat in the microwave or in a preheated oven at 350°F (175°C) until hot.
