  • 1 large yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (more to taste)
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons cold butter, cut into small pieces
  • 3/4 cup milk (plus a little more if needed)
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. 1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
  2. 2. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. 3. Stir in minced garlic and cook for 1 minute until fragrant. Add thyme, rosemary, black pepper, and 1/4 teaspoon salt.
  4. 4. Pour in chicken broth, scraping up browned bits. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  5. 5. Return chicken to the pot. Simmer, covered, for 10-15 minutes more, or until chicken is cooked through.
  6. 6. While soup simmers, prepare dumplings: In a medium bowl, whisk together 1 cup flour, baking powder, and 1/2 teaspoon salt.
  7. 7. Cut in cold butter until mixture resembles coarse crumbs.
  8. 8. Gradually stir in 3/4 cup milk until a soft, shaggy dough forms. Do not overmix.
  9. 9. Bring soup to a steady simmer. Drop spoonfuls of dumpling dough into the simmering soup.
  10. 10. Cover tightly and cook for 15-20 minutes, until dumplings are puffed and cooked through. Do not lift the lid.
  11. 11. Gently stir soup, taste, and adjust seasoning. Garnish with fresh parsley before serving.

Notes

Store any leftover soup in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat, adding a splash of broth or water if needed. Avoid high heat. Store dumplings separately if possible to prevent them from becoming too soft.
