A creamy, comforting casserole featuring tender chicken, wilted spinach, and rich cream cheese sauce topped with melted mozzarella.

- 2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 8 oz cream cheese, softened to room temperature
- 10 oz fresh spinach leaves, roughly chopped
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped for garnish
Instructions
- 1. Preheat oven to 375°F and grease a 9×13 inch baking dish. Season chicken with salt, pepper, and paprika.
- 2. Heat olive oil in a large skillet over medium-high heat. Brown chicken pieces for 5-6 minutes and set aside.
- 3. Add butter to the same skillet. Cook onion for 3-4 minutes until softened.
- 4. Add garlic and cook 30 seconds until fragrant.
- 5. Add spinach in batches, stirring until wilted, about 2-3 minutes total.
- 6. Reduce heat to low and add cream cheese, stirring until melted.
- 7. Slowly add chicken broth and heavy cream, stirring until smooth.
- 8. Add Italian seasoning, onion powder, and red pepper flakes. Stir in half the mozzarella and all Parmesan.
- 9. Return chicken to skillet and stir to combine.
- 10. Transfer to prepared baking dish and top with remaining mozzarella.
- 11. Cover with foil and bake 25 minutes. Remove foil and bake 10-15 minutes until golden.
- 12. Rest 5-10 minutes before serving. Garnish with parsley.
Notes
Store leftovers in refrigerator for up to 4 days. Reheat in microwave or 350°F oven until heated through.
