Description

A creamy, comforting casserole featuring tender chicken, wilted spinach, and rich cream cheese sauce topped with melted mozzarella.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz cream cheese, softened to room temperature
  • 10 oz fresh spinach leaves, roughly chopped
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. 1. Preheat oven to 375°F and grease a 9×13 inch baking dish. Season chicken with salt, pepper, and paprika.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Brown chicken pieces for 5-6 minutes and set aside.
  3. 3. Add butter to the same skillet. Cook onion for 3-4 minutes until softened.
  4. 4. Add garlic and cook 30 seconds until fragrant.
  5. 5. Add spinach in batches, stirring until wilted, about 2-3 minutes total.
  6. 6. Reduce heat to low and add cream cheese, stirring until melted.
  7. 7. Slowly add chicken broth and heavy cream, stirring until smooth.
  8. 8. Add Italian seasoning, onion powder, and red pepper flakes. Stir in half the mozzarella and all Parmesan.
  9. 9. Return chicken to skillet and stir to combine.
  10. 10. Transfer to prepared baking dish and top with remaining mozzarella.
  11. 11. Cover with foil and bake 25 minutes. Remove foil and bake 10-15 minutes until golden.
  12. 12. Rest 5-10 minutes before serving. Garnish with parsley.

Notes

Store leftovers in refrigerator for up to 4 days. Reheat in microwave or 350°F oven until heated through.
