  • 1 cup diced cooked ham (about 46 oz)
  • 1/2 cup heavy cream
  • 4 ounces Gruyere cheese, shredded (about 1 cup)
  • 2 ounces Swiss cheese, shredded (about 1/2 cup)
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Instructions

  1. 1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. 2. Add diced onion, celery, and carrot to the pot. Cook until softened, about 7-10 minutes.
  3. 3. Stir in minced garlic and cook for 1 minute until fragrant. Add dried thyme, black pepper, and salt.
  4. 4. Pour in chicken broth, scraping up browned bits. Bring to a simmer.
  5. 5. Return cooked chicken to the pot along with diced ham.
  6. 6. Reduce heat to low, cover, and simmer for 15-20 minutes for flavors to meld.
  7. 7. Stir in heavy cream. Gradually add shredded Gruyere and Swiss cheeses, stirring until completely melted and soup is smooth.
  8. 8. Taste and adjust seasoning with more salt and pepper if needed.
  9. 9. Ladle into bowls and garnish with fresh parsley, if desired.
