Instructions

  1. 1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook, stirring occasionally, until the vegetables have softened, about 5-7 minutes.
  2. 2. Stir in the minced garlic and cook for another minute until fragrant. Add the cubed chicken to the pot. Cook, stirring, until the chicken is no longer pink on the outside.

Notes
