- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 cup (8 ounces) cottage cheese (full-fat or 2%)
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped celery
- 2 tablespoons chopped fresh parsley
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- 1. Prepare the chickpeas: In a medium bowl, add the rinsed and drained chickpeas. Lightly mash about half of them with a fork, leaving the other half whole.
- 2. Combine wet ingredients: In a separate small bowl, whisk together the cottage cheese, Dijon mustard, and fresh lemon juice.
- 3. Add vegetables and herbs: To the bowl with the chickpeas, add the finely chopped red onion and celery. Fold in the chopped fresh parsley.
- 4. Combine and season: Pour the cottage cheese mixture over the chickpea and vegetable mixture. Stir gently to combine. Season generously with salt and freshly ground black pepper. Taste and adjust seasonings.
- 5. Chill (optional but recommended): Cover the bowl and refrigerate for at least 15-30 minutes before serving to allow flavors to meld.
Notes
Store in an airtight container in the refrigerator for up to 3-4 days. Not ideal for freezing. Best served cold or at room temperature.
