Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper, plus more to taste
  • 6 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 4 cups chicken broth
  • 1 cup milk (whole or 2%)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon mirin (optional)
  • 1 teaspoon sesame oil
  • 2 (3-ounce) packages instant ramen noodles (discard flavor packets)
  • Optional toppings: sliced green onions, soft-boiled egg, sesame seeds, chili oil, cilantro, lime

Instructions

  1. 1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken with salt and pepper. Add chicken to the pot and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. 2. Reduce heat to medium. Add minced garlic and grated ginger to the pot. Cook for 1-2 minutes until fragrant, being careful not to burn.
  3. 3. Pour in chicken broth, milk, soy sauce, and mirin (if using). Stir well, scraping the bottom. Bring to a simmer, then reduce heat to low and simmer for 5 minutes. Stir in sesame oil.
  4. 4. Add instant ramen noodles to the simmering broth and cook for 2-3 minutes, or according to package directions, until tender.
  5. 5. Return the cooked chicken to the pot. Stir to heat through for about 1 minute. Taste and adjust seasoning with salt and pepper if needed.
  6. 6. Ladle ramen into bowls and add desired toppings.

Notes

Allow cooked ramen to cool completely before storing in an airtight container in the refrigerator for up to 2-3 days. Reheat gently on the stovetop over medium-low heat, adding a splash of broth or milk to restore creaminess. Microwaving is also an option but may soften noodles further.
