Ingredients

Scale
  • 1.5 pounds small potatoes (such as Yukon Gold, red potatoes, or fingerlings)
  • 23 tablespoons olive oil or melted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional additions: chopped fresh herbs (rosemary, thyme, parsley), garlic powder, onion powder, paprika, grated Parmesan cheese

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  4. 4. Place potatoes on the baking sheet and gently smash each one to about ½ inch thick.
  5. 5. Drizzle with olive oil or melted butter and season with salt, pepper, and any optional additions.
  6. 6. Roast for 25-35 minutes, or until golden brown and crispy.
  7. 7. Garnish with fresh herbs or Parmesan if desired, and serve hot.

Notes

For the crispiest results, reheat leftovers in a 375°F (190°C) oven for 10-15 minutes.
