A hearty one-pot dinner featuring smoky kielbasa, tender potatoes, and melted cheese cooked slowly to comfort food perfection.

- 2 pounds Yukon Gold potatoes, sliced into 1/4-inch rounds
- 1 pound kielbasa sausage, sliced into 1/2-inch pieces
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (10.75 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup whole milk
- 2 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons butter
- 2 green onions, chopped (for garnish)

Instructions
- 1. Spray 6-quart crockpot with cooking spray. Slice potatoes into uniform 1/4-inch rounds.
- 2. Layer half the potatoes in crockpot, overlapping slightly. Season with half the salt, pepper, paprika, and thyme.
- 3. Brown kielbasa slices in a skillet over medium-high heat for 3-4 minutes. Layer over potatoes.
- 4. Cook onion in same skillet for 2-3 minutes, add garlic for 30 seconds.
- 5. Add remaining potatoes on top, season with remaining spices.
- 6. Whisk together soup, sour cream, and milk. Pour over layers.
- 7. Dot with butter pieces. Cover and cook on low 6-7 hours or high 3-4 hours.
- 8. In last 30 minutes, top with cheeses and continue cooking until melted.
- 9. Rest 10 minutes before serving. Garnish with green onions.
Notes
Store leftovers up to 4 days refrigerated or 3 months frozen. Reheat with splash of milk to restore creaminess.
