Description

A hearty one-pot dinner featuring smoky kielbasa, tender potatoes, and melted cheese cooked slowly to comfort food perfection.


Ingredients

  • 2 pounds Yukon Gold potatoes, sliced into 1/4-inch rounds
  • 1 pound kielbasa sausage, sliced into 1/2-inch pieces
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 2 green onions, chopped (for garnish)
  • Cooking spray

Instructions

  1. 1. Spray 6-quart crockpot with cooking spray. Slice potatoes into uniform 1/4-inch rounds.
  2. 2. Layer half the potatoes in crockpot, overlapping slightly. Season with half the salt, pepper, paprika, and thyme.
  3. 3. Brown kielbasa slices in a skillet over medium-high heat for 3-4 minutes. Layer over potatoes.
  4. 4. Cook onion in same skillet for 2-3 minutes, add garlic for 30 seconds.
  5. 5. Add remaining potatoes on top, season with remaining spices.
  6. 6. Whisk together soup, sour cream, and milk. Pour over layers.
  7. 7. Dot with butter pieces. Cover and cook on low 6-7 hours or high 3-4 hours.
  8. 8. In last 30 minutes, top with cheeses and continue cooking until melted.
  9. 9. Rest 10 minutes before serving. Garnish with green onions.

Notes

Store leftovers up to 4 days refrigerated or 3 months frozen. Reheat with splash of milk to restore creaminess.
