Description

Ingredients

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 23 ripe avocados, diced
  • Juice of 12 limes
  • Fresh cilantro, chopped, for garnish
  • Optional toppings: sour cream, shredded cheese, tortilla strips, jalapeños

Instructions

  1. 1. Place chicken in the slow cooker. Add onion, garlic, green chiles, black beans, and corn.
  2. 2. Pour in chicken broth and stir in cumin, chili powder, and oregano. Season with salt and pepper.
  3. 3. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  4. 4. Remove chicken, shred with two forks, and return to slow cooker.
  5. 5. Stir in diced avocado and lime juice. Taste and adjust seasoning.
  6. 6. Garnish with cilantro and serve with desired toppings.

Notes

To store, cool soup completely and refrigerate in an airtight container for up to 3-4 days. Reheat gently on the stovetop or in the microwave. For freezing, it’s best to omit avocado and lime; add them after thawing and reheating.
