Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 1 cup wild rice blend, rinsed
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste
  • ½ cup heavy cream (optional, for extra richness)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. 1. Place chicken in slow cooker. Pour in broth.
  2. 2. Add rinsed wild rice, onion, carrots, celery, and garlic.
  3. 3. Sprinkle with thyme and rosemary. Season with salt and pepper.
  4. 4. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  5. 5. Remove chicken, shred, and return to slow cooker.
  6. 6. Stir in heavy cream (if using).
  7. 7. Taste and adjust seasonings.

Notes
