- 1 ½ pounds boneless, skinless chicken breasts or thighs
- 6 cups low-sodium chicken broth
- 1 cup wild rice blend, rinsed
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- ½ teaspoon dried thyme
- ¼ teaspoon dried rosemary
- Salt and freshly ground black pepper, to taste
- ½ cup heavy cream (optional, for extra richness)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- 1. Place chicken in slow cooker. Pour in broth.
- 2. Add rinsed wild rice, onion, carrots, celery, and garlic.
- 3. Sprinkle with thyme and rosemary. Season with salt and pepper.
- 4. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- 5. Remove chicken, shred, and return to slow cooker.
- 6. Stir in heavy cream (if using).
- 7. Taste and adjust seasonings.
- 8. Garnish with parsley and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave. For best texture, omit cream when freezing and add upon reheating.
