Description

An easy and comforting Crockpot Pierogi Casserole with Kielbasa recipe. Tender pierogi, savory kielbasa, and creamy cheese sauce cooked low and slow.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound kielbasa, sliced into 1/2-inch rounds
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (16 ounce) package frozen potato and cheese pierogi
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup milk (or half-and-half for richer results)
  • 1 teaspoon dried dill
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: fresh parsley, extra sour cream, chives

Instructions

  1. 1. Heat the olive oil in a large skillet over medium-high heat. Add the kielbasa slices and cook until browned on both sides, about 5-7 minutes. Remove the kielbasa from the skillet and set aside.
  2. 2. Add the chopped onion to the same skillet and cook until softened and lightly browned, about 5-7 minutes. Add the minced garlic and cook for another 1 minute until fragrant.
  3. 3. Grease your slow cooker insert lightly with cooking spray or butter. Place the browned kielbasa, cooked onions and garlic, and the frozen pierogi into the slow cooker.
  4. 4. In a medium bowl, whisk together the sour cream, milk, dried dill, salt, and pepper until smooth.
  5. 5. Pour the sour cream mixture evenly over the pierogi and kielbasa in the slow cooker.
  6. 6. Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top of the mixture.
  7. 7. Cover and cook on LOW for 3-4 hours, or on HIGH for 2-3 hours, until the pierogi are tender and heated through, and the cheese is melted and bubbly.
  8. 8. Stir gently to combine the ingredients just before serving.

Notes

Allow the casserole to cool completely before storing. Store in an airtight container in the refrigerator for up to 3-4 days. To reheat, warm gently in the microwave or bake at 350°F (175°C) until heated through. Add a splash of milk or broth if dry.
