Description

A comforting and flavorful Crockpot Zuppa Toscana recipe made with Italian sausage, potatoes, kale, and cream. Easy slow cooker meal perfect for weeknights.

Ingredients

Scale
  • 1 pound Italian sausage (mild or spicy, your preference)
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for a little heat)
  • 4 cups kale or spinach, chopped (stems removed if using kale)
  • 1 pint heavy cream
  • 1 pound Yukon Gold potatoes, diced into 1/2-inch pieces
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. 1. In a large skillet over medium-high heat, cook the Italian sausage, breaking it up with a spoon, until browned. Drain off excess grease.
  2. 2. Add chopped onion to the same skillet and cook until softened and translucent, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  3. 3. Transfer the browned sausage, sautéed onions, and garlic to your slow cooker.
  4. 4. Pour in the chicken broth, add the undrained diced tomatoes, dried oregano, dried basil, and red pepper flakes (if using). Stir to combine.
  5. 5. Add the diced Yukon Gold potatoes to the slow cooker and stir.
  6. 6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
  7. 7. In the last 30 minutes of cooking, stir in the chopped kale or spinach.
  8. 8. Once the greens have wilted, stir in the heavy cream. Cook for another 10-15 minutes, uncovered, on the “warm” setting or low, to thicken slightly. Do not boil the soup after adding cream.
  9. 9. Season generously with salt and freshly ground black pepper to taste. Ladle into bowls and top with grated Parmesan cheese.

Notes

Allow soup to cool completely before storing in an airtight container in the refrigerator for 3-4 days. For reheating, gently warm on the stovetop over medium-low heat, stirring occasionally. Avoid boiling after adding cream.
