Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (or to taste)
  • Salt and freshly ground black pepper to taste
  • 1 large egg, lightly beaten
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil, for frying

Instructions

  1. 1. Mash 1 (15-ounce) can of drained and rinsed chickpeas in a bowl until mostly broken down but with some texture remaining.
  2. 2. Add 1/4 cup finely chopped red onion, 2 minced garlic cloves, 1/4 cup chopped fresh parsley, 2 tablespoons chopped fresh cilantro (if using), 1 teaspoon ground cumin, 1/2 teaspoon ground coriander, and 1/4 teaspoon cayenne pepper to the mashed chickpeas. Stir well.
  3. 3. Season generously with salt and freshly ground black pepper.
  4. 4. Stir in 1 lightly beaten large egg until well incorporated.
  5. 5. Gradually add 1/4 cup all-purpose flour, stirring until a cohesive, thick batter forms. Add more flour if too wet, or a splash of water/egg if too dry.
  6. 6. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  7. 7. Drop spoonfuls (about 2 tablespoons each) of the chickpea mixture into the hot oil, cooking in batches without overcrowding the pan.
  8. 8. Cook for 3-5 minutes per side, until golden brown and crispy.
  9. 9. Remove fritters from the skillet and place on a plate lined with paper towels to drain excess oil.

Notes

Store cooled fritters in an airtight container in the refrigerator for up to 3-4 days. Reheat in a 350°F oven for 8-12 minutes for best crispiness.
