Description

A quick and easy one-pan meal featuring lean ground beef, fresh spinach, and salty feta cheese, perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef (85% or 90% lean)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • Salt and freshly ground black pepper to taste
  • 1 (10-ounce) package fresh spinach, washed
  • ½ cup beef broth or water
  • 4 ounces crumbled feta cheese
  • Optional: Red pepper flakes for a touch of heat

Instructions

  1. 1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no pink remains. Drain off any excess grease.
  2. 2. Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes.
  3. 3. Stir in the minced garlic, dried oregano, and dried basil. Cook for an additional minute until fragrant. Season with salt and pepper to taste. Remember that feta cheese is salty, so be mindful of how much salt you add at this stage.
  4. 4. Add the fresh spinach to the skillet, in batches if necessary. Cook, stirring occasionally, until the spinach wilts down. This usually takes about 2-3 minutes.
  5. 5. Pour in the beef broth or water. Bring to a simmer and cook for 2-3 minutes, allowing the flavors to meld and the liquid to reduce slightly.
  6. 6. Remove the skillet from the heat. Sprinkle the crumbled feta cheese over the top. If you like a little heat, this is also a good time to add a pinch of red pepper flakes.
  7. 7. Gently stir the feta into the beef and spinach mixture, allowing it to soften and create a light, creamy sauce. The residual heat will be enough to warm the feta through.

Notes

Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in a skillet over low heat with a splash of liquid or in the microwave.
