- 2 pounds Yukon Gold potatoes, scrubbed and cut into 1-inch cubes
- 1/2 cup olive oil
- 1 packet (1 ounce) Lipton Onion Soup Mix
- 1/4 cup grated Parmesan cheese (optional)
- Freshly ground black pepper to taste
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. In a large bowl, toss the potato cubes with the olive oil until evenly coated.
- 3. Sprinkle the Lipton Onion Soup Mix over the oiled potatoes. Toss again thoroughly to ensure every potato piece gets a good coating.
- 4. If using, add the Parmesan cheese to the bowl and toss once more.
- 5. Spread the seasoned potatoes in a single layer on a large baking sheet. Use two sheets if necessary to avoid overcrowding.
- 6. Season with freshly ground black pepper.
- 7. Bake for 30-40 minutes, or until tender and crispy. Flip halfway through baking for even browning.
- 8. Remove from oven and let sit for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a hot oven or air fryer for best crispiness.
