- 1 (28-ounce) can crushed tomatoes
- 1 (15-ounce) can full-fat coconut milk (unsweetened)
- 1/2 cup vegetable broth
- 2 (15-ounce) cans butter beans, drained and rinsed
- 1/4 cup nutritional yeast
- 2 tablespoons fresh lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh basil or parsley, chopped, for garnish
Instructions
- 1. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
- 2. Add the minced garlic, smoked paprika, dried oregano, and red pepper flakes (if using) to the skillet. Cook for another minute, stirring constantly, until fragrant.
- 3. Pour in the crushed tomatoes, coconut milk, and vegetable broth. Stir everything together to combine. Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and let it cook for at least 15 minutes.
- 4. Stir in the drained and rinsed butter beans. Continue to simmer gently, uncovered, for another 10-15 minutes, or until the beans are heated through and the sauce has thickened to your desired consistency. Stir occasionally to prevent sticking.
- 5. Remove the skillet from the heat. Stir in the nutritional yeast and fresh lemon juice. Season generously with salt and freshly ground black pepper to taste.
