- 1 large yellow onion, finely chopped
- 2 cloves garlic, minced
- 1.5 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon sweet Hungarian paprika
- 1 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
- 6 cups chicken broth (low sodium)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup heavy cream
- 2 tablespoons all-purpose flour (optional, for thickening)
- 1 tablespoon butter (optional, if using flour for thickening)
- Fresh parsley, chopped, for garnish
- Dollop of sour cream or Greek yogurt, for serving (optional)
Instructions
- 1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
- 2. Add minced garlic and cook for another minute until fragrant.
- 3. Add chicken pieces, season with salt and pepper, and cook until lightly browned on all sides.
- 4. Sprinkle in sweet Hungarian paprika and smoked paprika (if using). Stir to coat and cook for 1 minute until fragrant.
- 5. Pour in chicken broth and add diced tomatoes. Stir to combine.
- 6. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until chicken is tender.
- 7. For a thicker soup, whisk together flour and butter in a small bowl to form a paste. Gradually whisk this into the simmering soup until thickened. Cook for 2-3 minutes.
- 8. Stir in heavy cream. Heat gently, but do not boil.
- 9. Taste and adjust seasoning with salt and pepper.
- 10. Serve hot, garnished with fresh parsley and a dollop of sour cream or Greek yogurt, if desired.
Notes
Store leftover soup in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over medium-low heat, stirring frequently. Avoid boiling.
