Description

A refreshing and flavorful salad packed with all the delicious toppings of your favorite pizza, perfect for a lighter side dish or a satisfying meal on its own.


Ingredients

  • 1 head of romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped pepperoni (turkey or beef)
  • 1/4 cup sliced salami
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup pepperoncini, sliced (optional)
  • 1/4 cup croutons (optional, for serving)
  • For the Dressing:
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. 1. Wash and chop the romaine lettuce. Place it in a large salad bowl.
  2. 2. Add the halved cherry tomatoes, sliced black olives, and thinly sliced red onion to the bowl.
  3. 3. Scatter the chopped pepperoni and sliced salami over the vegetables.
  4. 4. Sprinkle the shredded mozzarella cheese on top.
  5. 5. If using, add the sliced pepperoncini to the salad.
  6. 6. In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and black pepper. This creates our vibrant dressing.
  7. 7. Just before serving, pour the dressing over the salad and toss gently to coat all the ingredients.
  8. 8. If desired, top with croutons for an added crunch.

Notes

Store undressed salad in an airtight container in the refrigerator. Dressing can be stored separately for up to a week. Best served fresh.
