- 1 head of romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped pepperoni (turkey or beef)
- 1/4 cup sliced salami
- 1/2 cup shredded mozzarella cheese
- 1/4 cup pepperoncini, sliced (optional)
- 1/4 cup croutons (optional, for serving)
- For the Dressing:
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- 1. Wash and chop the romaine lettuce. Place it in a large salad bowl.
- 2. Add the halved cherry tomatoes, sliced black olives, and thinly sliced red onion to the bowl.
- 3. Scatter the chopped pepperoni and sliced salami over the vegetables.
- 4. Sprinkle the shredded mozzarella cheese on top.
- 5. If using, add the sliced pepperoncini to the salad.
- 6. In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and black pepper. This creates our vibrant dressing.
- 7. Just before serving, pour the dressing over the salad and toss gently to coat all the ingredients.
- 8. If desired, top with croutons for an added crunch.
Notes
Store undressed salad in an airtight container in the refrigerator. Dressing can be stored separately for up to a week. Best served fresh.
