- 1.5 pounds boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 1 large yellow onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt (or to taste)
- 4 cups chicken broth (low sodium recommended)
- 1.5 pounds Yukon Gold potatoes, cut into 1-inch cubes
- 1 cup frozen peas
- 2 tablespoons all-purpose flour or cornstarch
- Fresh parsley, chopped (for garnish, optional)
Instructions
- 1. If desired, sear chicken pieces in olive oil until lightly browned. Sauté chopped onion, carrots, and celery in the same skillet until softened (5-7 minutes). Add minced garlic and cook for 1 minute more.
- 2. Transfer sautéed vegetables to slow cooker. Add seared chicken (if using). Stir in thyme, rosemary, sage, black pepper, and salt. Pour in chicken broth, ensuring chicken is mostly submerged.
- 3. Add cubed potatoes to the slow cooker and stir gently.
- 4. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is cooked through and tender.
- 5. Remove chicken, shred it into bite-sized pieces, and return to the slow cooker.
- 6. In a small bowl, whisk flour (or cornstarch) with 1/4 cup cold water to make a slurry. Pour into the slow cooker and stir to combine.
- 7. Stir in frozen peas. Cover and cook on HIGH for an additional 30 minutes to 1 hour, or until stew has thickened and peas are heated through.
- 8. Taste and adjust seasoning with salt and pepper before serving. Garnish with fresh parsley if desired.
Notes
Cool completely before storing. Store in airtight containers in the refrigerator for 3-4 days or freeze for up to 2-3 months.
