- 8 bone-in, skin-on chicken thighs (about 3 pounds)
- 1/2 cup honey
- 1/4 cup low-sodium soy sauce
- 6 cloves garlic, minced
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons cornstarch
- 3 tablespoons cold water
- 2 green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (optional)
Instructions
- 1. Pat chicken thighs dry and season with salt and pepper.
- 2. Optional: Heat olive oil in a skillet and brown chicken thighs for 3-4 minutes per side.
- 3. Whisk together honey, soy sauce, garlic, vinegar, ginger, and red pepper flakes.
- 4. Place chicken in slow cooker and pour sauce over top.
- 5. Cook on LOW for 4-5 hours or HIGH for 2.5-3 hours.
- 6. Mix cornstarch and cold water, stir into slow cooker in last 30 minutes.
- 7. Let rest 5 minutes, then garnish with green onions and sesame seeds.
Notes
Store leftovers in refrigerator for up to 4 days. Can be frozen for up to 3 months. Reheat gently to prevent drying out.
