Description

A simple and delicious one-pot meal featuring tender chicken and flavorful potatoes cooked in a savory garlic Parmesan sauce in your slow cooker. Perfect for easy weeknight dinners!


Ingredients

  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 1.5 pounds baby potatoes, quartered
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (or to taste)
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. 1. Pat the chicken dry with paper towels. If using chicken breasts, cut them into 2-inch pieces. Season chicken with salt and pepper.
  2. 2. In a bowl, toss the quartered baby potatoes with 1 tablespoon olive oil, Italian seasoning, garlic powder, onion powder, and pepper.
  3. 3. Place the seasoned potatoes in the bottom of your slow cooker.
  4. 4. Add the seasoned chicken pieces on top of the potatoes.
  5. 5. In a small bowl, whisk together the remaining 1 tablespoon olive oil, minced garlic, and chicken broth. Pour over chicken and potatoes.
  6. 6. Sprinkle Parmesan cheese evenly over the top.
  7. 7. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is cooked through and potatoes are tender.
  8. 8. Stir gently. If sauce is too thin, thicken with a cornstarch slurry or by reducing on sauté/stovetop.

Notes

Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the oven, on the stovetop, or in the microwave.
