A simple and delicious one-pot meal featuring tender chicken and flavorful potatoes cooked in a savory garlic Parmesan sauce in your slow cooker. Perfect for easy weeknight dinners!

- 1.5 pounds boneless, skinless chicken thighs or breasts
- 1.5 pounds baby potatoes, quartered
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- Optional: Fresh parsley, chopped, for garnish
Instructions
- 1. Pat the chicken dry with paper towels. If using chicken breasts, cut them into 2-inch pieces. Season chicken with salt and pepper.
- 2. In a bowl, toss the quartered baby potatoes with 1 tablespoon olive oil, Italian seasoning, garlic powder, onion powder, and pepper.
- 3. Place the seasoned potatoes in the bottom of your slow cooker.
- 4. Add the seasoned chicken pieces on top of the potatoes.
- 5. In a small bowl, whisk together the remaining 1 tablespoon olive oil, minced garlic, and chicken broth. Pour over chicken and potatoes.
- 6. Sprinkle Parmesan cheese evenly over the top.
- 7. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is cooked through and potatoes are tender.
- 8. Stir gently. If sauce is too thin, thicken with a cornstarch slurry or by reducing on sauté/stovetop.
Notes
Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the oven, on the stovetop, or in the microwave.
