Description

Ingredients

  • 1 pound lean ground beef
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (10-ounce) can corn, drained
  • 1 large sweet potato (about 1 pound), peeled and diced into ½-inch cubes
  • ½ cup chicken or vegetable broth
  • Fresh cilantro, chopped, for garnish (optional)
  • Sour cream or Greek yogurt, for serving (optional)
  • Shredded cheddar cheese, for serving (optional)
  • Lime wedges, for serving (optional)

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off excess grease.
  2. 2. Add chopped onion to the skillet and cook until softened, about 5-7 minutes.
  3. 3. Stir in minced garlic and cook until fragrant, about 1 minute. Add chili powder, cumin, smoked paprika, cayenne pepper (if using), and oregano. Stir until fragrant, about 30 seconds. Season with salt and pepper.
  4. 4. Pour in diced tomatoes (undrained), black beans, corn, and broth. Stir well, scraping up any browned bits.
  5. 5. Add diced sweet potato cubes. Stir to combine and ensure sweet potatoes are mostly submerged.
  6. 6. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until sweet potatoes are tender, stirring occasionally.
  7. 7. Taste and adjust seasonings.
  8. 8. Serve hot, garnished with cilantro, sour cream or Greek yogurt, shredded cheese, and lime wedges, if desired.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stovetop over medium-low heat with a splash of liquid, or in the microwave until heated through.
