- 2 pounds boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil or avocado oil
- Salt and freshly ground black pepper to taste
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small yellow onion, thinly sliced
- 3 cloves garlic, minced
- 1 (13.5 ounce) can full-fat coconut milk (unsweetened)
- 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
- 1/4 cup bone broth or chicken broth (compliant)
- 2 tablespoons nutritional yeast (optional)
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Pinch of red pepper flakes (optional)
- 1/4 cup fresh basil leaves, chopped (for garnish)
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- 1. Pat the chicken dry and season with salt and pepper. Pound chicken breasts to even thickness if using.
- 2. Heat oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown; remove and set aside.
- 3. Add bell peppers and onion to the skillet. Cook for 5-7 minutes until softened.
- 4. Stir in garlic and cook for 1 minute until fragrant.
- 5. Pour in coconut milk and bone broth. Add sun-dried tomatoes, nutritional yeast (if using), dried basil, oregano, and red pepper flakes (if using). Stir to combine.
- 6. Bring sauce to a gentle simmer. Return chicken to the skillet.
- 7. Reduce heat to low, cover, and simmer for 15-20 minutes, until chicken is cooked through.
- 8. Taste and adjust seasoning.
- 9. Garnish with fresh basil and parsley.
Notes
Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat, adding a splash of broth if needed.
