Crispy Garlic Butter Parmesan Smashed Potatoes

Description

Mini baby potatoes smashed and roasted with garlic butter and Parmesan cheese for a crispy, flavorful side dish.


Ingredients

Scale
  • 2 pounds baby potatoes
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Boil the potatoes until tender, about 12 to 15 minutes, then drain and cool slightly.
  2. Preheat your oven to 450°F.
  3. Melt the butter and stir in the minced garlic, then set aside.
  4. Arrange potatoes on a baking sheet and flatten each with the bottom of a glass to about 1/3 inch thick.
  5. Brush each potato with the garlic butter, season with salt and pepper, and sprinkle with half the Parmesan.
  6. Roast at 450°F for 12 minutes, then rotate the pan and sprinkle with the remaining Parmesan.
  7. Broil on high for 1 to 2 minutes until edges are golden.
  8. Remove and let cool for a minute, then garnish with parsley and black pepper.

Notes

For a vegan version, substitute butter with olive oil and Parmesan with nutritional yeast.
