- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups low-sodium chicken broth (or vegetable broth for a lighter option)
- 1.5 pounds boneless, skinless chicken breasts or thighs
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 bay leaf
- 1/2 cup small pasta, like ditalini or orzo (optional)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving (optional)
Instructions
- 1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
- 2. Add minced garlic and cook for 1 minute until fragrant.
- 3. Pour in chicken broth, add chicken, thyme, rosemary, and bay leaf. Bring to a boil.
- 4. Reduce heat, cover, and simmer for 20-25 minutes, or until chicken is cooked through.
- 5. Remove chicken, shred or dice it, and return to the pot.
- 6. If using pasta, add it now and cook according to package directions.
- 7. Season generously with salt and pepper to taste.
- 8. Remove and discard the bay leaf.
- 9. Garnish with fresh parsley and serve with lemon wedges if desired.
Notes
Allow soup to cool completely before storing. Refrigerate for up to 3-4 days or freeze for up to 3 months in airtight containers. Reheat gently on the stovetop or in the microwave.
