Description

Creamy mashed potatoes infused with sweet roasted garlic, perfect for a comforting side dish.


Ingredients

Scale
  • 2 pounds of potatoes (Yukon Golds or Russets)
  • 1 head of garlic
  • 1/2 cup of butter (salted or unsalted)
  • 1/2 cup of heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic and drizzle with olive oil. Wrap in foil and roast for 30-35 minutes until soft.
  3. Peel and chop the potatoes, then boil in salted water until tender, approximately 15-20 minutes.
  4. Drain any excess water after cooking.
  5. Return the potatoes to the pot to help evaporate residual heat.
  6. Squeeze the roasted garlic cloves into the pot with the potatoes.
  7. Add butter and heavy cream, combining until smooth.
  8. Mash the potatoes until creamy, avoiding over-mixing.
  9. Season with salt and pepper to taste.
  10. Serve warm, garnished with chopped chives or parsley if desired.

Notes

For a lower-carb version, substitute potatoes with cauliflower. Use olive oil instead of butter for a lighter taste.
