Ingredients

- 2 pounds of potatoes (Yukon Golds or Russets)
- 1 head of garlic
- 1/2 cup of butter (salted or unsalted)
- 1/2 cup of heavy cream
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the top off the head of garlic and drizzle with olive oil. Wrap in foil and roast for 30-35 minutes until soft.
- Peel and chop the potatoes, then boil in salted water until tender, approximately 15-20 minutes.
- Drain any excess water after cooking.
- Return the potatoes to the pot to help evaporate residual heat.
- Squeeze the roasted garlic cloves into the pot with the potatoes.
- Add butter and heavy cream, combining until smooth.
- Mash the potatoes until creamy, avoiding over-mixing.
- Season with salt and pepper to taste.
- Serve warm, garnished with chopped chives or parsley if desired.
Notes
For a lower-carb version, substitute potatoes with cauliflower. Use olive oil instead of butter for a lighter taste.
