Description

A moist and flavorful meatloaf with a caramelized glaze, perfect for family dinners and meal prep.


Ingredients

  • 2 lbs ground beef (80/20 blend)
  • ½ cup breadcrumbs (panko or regular)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • ¼ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp ketchup
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp fresh parsley, chopped
  • ½ cup ketchup (for glaze)
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard (for glaze)
  • 1 tbsp Worcestershire sauce (for glaze)
  • ½ tsp apple cider vinegar (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a loaf pan or line a baking sheet with parchment paper.
  2. Sauté the onions and garlic in olive oil until soft, then let them cool.
  3. Combine the ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, smoked paprika, and parsley in a large bowl.
  4. Form the mixture into a tight, even loaf and place it in the prepared pan.
  5. Whisk together the ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and apple cider vinegar until smooth.
  6. Brush a thin layer of glaze over the top of the meatloaf before baking.
  7. Bake uncovered for 45 minutes. Brush with more glaze and bake for an additional 15 minutes.
  8. Check the internal temperature until it reaches 160°F (71°C).
  9. Let it rest for 10 minutes before slicing.
  10. Slice and serve with your favorite sides, like mashed potatoes or roasted vegetables.

Avoid overmixing; let the meatloaf rest before slicing for better texture.
