A satisfying side dish featuring roasted potatoes and peppers, enhanced with spices and feta for a burst of flavor.

- 2 lbs potatoes (peeled and cut into small cubes)
- 1 red capsicum (bell pepper, cut into cubes)
- 3 tablespoons olive oil
- 1 teaspoon salt
- Juice of ¼ lemon
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- ¼ teaspoon cinnamon
- ½ teaspoon ground pepper
- 2 oz feta cheese (smooth or Greek)
- 2 tablespoons chopped parsley
- Juice of ¼ lemon
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed potatoes and red pepper in a large bowl with the salt, 2 tablespoons of olive oil, and the juice of ¼ lemon.
- Grease a large, flat sheet pan with another tablespoon of olive oil. Spread the potatoes and peppers evenly on the pan.
- Roast in the oven on the middle shelf for 25 minutes, until the edges start to crisp.
- Prepare the spice mix with garlic powder, onion powder, paprika, oregano, cinnamon, and ground pepper.
- Remove the potatoes after 25 minutes and sprinkle evenly with the spice mix. Use a spatula to stir and coat the potatoes.
- Place back in the oven for another 10-15 minutes until the potatoes have a golden crispy edge and are soft in the middle.
- Finish by drizzling with another splash of lemon juice, then crumble the feta and sprinkle the parsley on top.
Notes
Using fresh herbs and adjusting seasoning to taste can enhance the dish.
