Description

A hearty and flavorful one-pot dish of ground beef cooked with spices, potatoes, and coconut milk, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 cup peas
  • 2 medium potatoes, chopped
  • 2 cups tomatoes, diced
  • 1 cup coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 12 green chilies, chopped (optional)
  • 2 tsp curry powder
  • 1 tsp cumin powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat some oil in a large pot over medium heat and sauté the onions until translucent, about 5 minutes.
  2. Add the garlic and ginger, cooking until fragrant, about 30 seconds.
  3. Stir in the ground beef, breaking it apart while cooking until browned, around 6-8 minutes.
  4. Add the chopped potatoes, diced tomatoes, peas, coconut milk, curry powder, cumin, and salt. Mix well.
  5. Bring the mixture to a simmer, then cover and cook for about 20 minutes until the potatoes are tender.
  6. Adjust seasoning if necessary, and garnish with fresh cilantro before serving.

Notes

For a lighter version, use ground turkey or chicken. This dish pairs well with rice or naan.
